ingredients
- 75ml soy milk (other milk doesnt work)
- 1 tsp lemon juice or white vinegar
- 35g mararine
- 50g sugar
- 75g flour (gluten free flour works too)
- 1 teaspoon baking powder
- u can add vanilla extract, cocoa powder, coffee to flavour them however u want
method
- add lemon juice to milk, and set aside
- combine dry ingredients
- add margarine, and now curdled soy milk, and mix
- pour into lined tin, or cupcake cases
- bake on 180 for 20 mins, or until golden, and a skewer comes out clean
banana bread
ingredients
- 2 ripe bananas
- 50g oil
- 66g sugar
- 150g flour. if using plain flour, add 1 tbsp of baking powder
method
- mash bananas, and add oil and sugar
- mix in flour and baking powder
- pour into lined tin or cupcake cases
- bake on 180 for 20 mins
cheesecake
ingredients
- 1 packet oreos
- 40g margarine
- 1 box silken tofu
- icing sugar to taste
- vanilla extract
method
- blend or crush oreos into crumbs, and add melted margarine.
- press oreo mix into tin (i use a 7" round tin) and use spoon or bottom of mug to press it down
- blend tofu, vanilla and icing sugar. I normally use 3 heaped tablespoons, but you can add more or less.
- pour tofu mix onto oreo base, and set in fridge for 3 or 4 hours
biscuits
ingredients
- 100g marg
- 50g sugar
- 150g flour
- optional extras like zest or cocoa powder
method
- cream butter and sugar
- add flour and combine to create dough ball. let sit in fridge for 40 mins
- once chilled, roll out and cut
- bake on 180 for 12 mins
